It is still really hot here, which is rather unusual for England - we are usually lucky to see a few days of true Summer weather. Wimbledon is looking like the best two weeks yet and I think up until now the roof has only been over once. I really am not complaining as it is absolutely wonderful to see the glorious sunshine but the problem is it does make for a rather tiring day, so I had the perfect excuse for an afternoon siesta earlier on!
Now I am feeling a little more refreshed my mind has turned to what we are going to eat tonight. Does anyone else find it difficult to know what to have when it is really warm? I have been food shopping today but don't really fancy anything I bought! I don't think you can go wrong with a big salad in this weather though and my favourite has to be a bacon, boiled egg and avocado one.

This chicken and bulger wheat one looks rather delicious too. Anything that is easy and quick to prepare is perfect; throw it all into a beautiful big bowl and serve.

Perhaps add a little sorbet for dessert such as this gorgeous peach one, just to round the meal off nicely. Of course I would love to sit with a glass of crisp white wine on this little table by the water in the first picture to enjoy the balmy summer evening.
How about you, what do you eat when it is really hot? Can you recommend any really superb salads to try?




I like cooked, cold baby potatoes sprinkled with fresh herbs and sea salt. Also enjoy veggie sandwiches. Lots of fresh veg, avocado, cream cheese on thick, multigrain bread. Ooh, and now I'm on a roll... How about a caprese salad with fresh mozzarella and cherry tomatoes with basil? Yum!

I envy all the sunshine. I'm in Seattle and summer has not really arrived yet ;( being from Brazil I miss having warm weather menus! salads are really my favorites and one I make a lot is a shrimp and vegetables one!

ReplyDeleteThat's funny! I'm having bacon, eggs, lettuce, spring onions, yellow cheese in cubes and some croutons for lunch. Not a very light salad I'm afraid. We have tomatoes, lettuce, cucumbers and peppers from my in-laws' veggie garden and that is a lighter option. Homemade lemonade is also on the menu.

Halloumi salad is good....I like to cook the cheese in a searing hot griddle pan until it's charred with black stripes, and serve with a vinaigrette dressing on peppery leaves of some sort. Also good with a broad bean salad - a very worthy option in its own right.
ReplyDeleteRice salads - I love camargue red rice... spring onions, walnuts, pumpkin seeds, finely chopped marinated artichoke, all drizzled with some of the artichoke oil.
Puy lentil salads with celery, chopped hazelnuts, bits of avocado and a balsamic vinaigrette.
Salads with fruit and feta - the contrast of sweet with salty. Beetroot and feta also delivers on this front.
You can't go wrong with tomatoes, basil, and lots of pepper.
Guacamole - the solution to all life's problems.
Blanched green beans, cooled in ice water so they keep their bite, with a walnut dressing.
I love summer salads....
That sorbet looks heavenly! I'm all about chilled pasta salad in the summer!
